Recipe for preparing Chettinad style chicken dum biryani with detailed procedure for putting dum.

Ingredients
Rice – 1/2kg
Chicken with bones – 1/2 kg
Coriander leaves – 1/2 bunch
Mint leaves – 1 bunch
Green chilli – 4
Big Onion – 250 gm
Tomato – 250 gm
Ginger garlic paste – 50 gm
Curd – 1/2 cup
Oil – 2 tbsp
Cardamom – 2
Edible alga / algae(Kadal pasi ) – 1/2 tsp
Cinnamon, Cloves, Marathi Moggu, Star anise(Annasi poo) – Each 2
Red Chilly Powder – 2 tsp
Turmeric Powder – 1/2 tsp
Coriander Powder – 4 tsp
Salt – to taste

Recipe
Heat a thick bottom vessel or a cooker. Add 2 tbsp oil and add all garam masala ingredient(cinnamon, cloves, marathi moggu, annasi poo, cardomon, star anise)s one by one. You can also powder these ingredients and use it.
Add chopped onion and fry it till it turns into brown color. Now add ginger garlic paste and fry it till the raw smell goes off. Then add tomato, saute it well.
Now add turmeric powder, chiili powder, coriander powder and little water, fry it till till the raw smell goes off.
Add coriander, mint leaves and saute it well. Now add cleaned chicken with little salt , fry it till the chicken color changes.
Once its half done, then add slitted green chilli and mix it well.
Finally add washed rice and mix well. For 1 cup rice add 1 1/2 cups of water. Close the lid and let it to cook.
Once the rice is 3/4th done add curd and mix well.You can dum cook the biryani by covering the vessel with wheat flour dough or with a thick kitchen towel. Or you can keep the vessel that containg water on top of the briyani vessel.
Here I’ve used kitchen towel and put the tight lid on top of it.
Now completely reduce the heat into medium flame and remove the biryani vessel.
Now place a flat heavy bottomed non-stick pan with water on the stove and allow it to heat.
After that on top of it place the biryani vessel and cook for 30 -35 minutes. (or you can cook the biryani in low heat for 40 minutes)
You will smell a nice aroma after 30 -35 minutes so that way you will know the biryani is ready now.Now turn it off the heat and remove the vessel.
Notes
You can make small slits on the chicken, this well help the masala to penetrate well into the chicken.
Make sure that the heavy bottomed pan( used for putting dum) has water through out the dum period to avoid briyani’s lower layer getting burnt.

A perfect and delicious one pot meal , I am totally in love with this dish. A comfort meal , you can sit back and enjoy , and feel right at home ....I have used store bought biryani masala for this , like shaan , eastern, Ann's , or even Sanjeev kapoor's. Add more or reduce the amount of spices and masala to suit your taste buds.
While growing up and even now , I crave for biryani  often and never fail to order on our visit to an Indian joint here

Ingredients:-
For Rice
Basmati Rice - 1 1/2 cup
Whole cloves,cardamom and mace- 3 each
Bay leaf - 1
Butter - 1/4 stick
Salt
To Marinate Chicken
Chicken - 1/2 kg
Yogurt - 2 tablespoon
Ginger garlic paste - 1 tea spoon
Crushed pepper - 1/2 to 1 tea spoon
Biryani Masala - 1/2 to 1 tea spoon
Salt
For Chicken Masala
Onion Chopped - 2 cup
Ginger - Garlic paste - 1 tsp
Green chilli chopped - 4-5
Biriyani Masala - 2 tbsp
Turmeric powder- 1/2 tsp
Crushed Pepper  - 1/2 tsp
Tomato - 1-2 chopped
Yogurt - 2 tablespoon
Mint Leaves chopped - 1 cup
Cilantro leaves chopped - 1/2 cup Or add 2-3 table spoon of mint coriander chutney (even store bought)
Garnishing
Onion Thinly sliced - 1 cup(garnishing)
Cashew nuts - 1/2 cup
Raisins- 1/2 cup
Butter
Salt to taste

Method
Marinate the chicken pieces with all the ingredients under To Marinate section and set aside for 3-4 hours in the fridge
Heat butter in a pan and add all whole spices for a minute.Add rice and fry for 2 minutes. Add 3 cups hot water , salt and cook covered till done.
Heat butter in a pan and fry the Onions first,the fry cashew nuts and raisins,keep it aside
In the same pan Saute' Chopped onions until it is soft and add Ginger garlic paste and green chillies , saute.add chopped tomatoes and saute till the oil separates.
When oil starts to separate add Turmeric powder,pepper crushed ,Biriyani masala and salt and saute it for a minute
Add the chicken pieces to it and saute' it well for a couple of minutes
Now mix it with yogurt and the chopped mint leaves and coriander leaves
Add a little water if needed and cook it in a medium flame till the chicken is done and the gravy is medium dry...There should be some gravy left for baking the rice in it...
Now take a baking dish and Brush it with some butter.
Spread a layer of rice in the bottom and chicken on the top.
Arrange the rice and the chicken masala this way.
Garnish with Fried onions,cashews and raisins and cover it with an aluminium foil
Preheat Oven to 350 degrees and bake this for 10-20 minutes

Ingredients
2 tbsp vegetable oil
1 small cauliflower, broken into small florets
2 large sweet potatoes, peeled and cubed
1 large onion, sliced
1l hot vegetable stock
3 tbsp hot curry paste (Madras is good)
1 red chilli, seeded and finely chopped
large pinch of saffron strands
2 tsp mustard seeds (black or white)
500g basmati rice
140g trimmed green beans, halved
2 lemons, juice only
a handful of fresh coriander leaves
50g packet salted roasted cashew nuts
poppadoms and raita, to serve

Method
Preheat the oven to 220C/gas 7/fan 200C. Pour the oil into a large roasting tin or ovenproof dish and put in the oven for a couple of minutes to heat through. Add all the vegetables to the tin, except the beans, stirring to coat them in the hot oil. Season with salt and pepper and return to the oven for 15 minutes until beginning to brown.
While the vegetables are roasting, stir together the stock, curry paste, chilli, saffron and mustard seeds.
Mix the rice and green beans with the vegetables in the tin, then pour over the stock mixture. Lower the oven to 190C/gas 5/fan 190C. Cover the dish tightly with foil and bake for 30 minutes until the rice is tender and the liquid has been absorbed. Stir in the lemon juice and check the seasoning, then scatter over the coriander and cashew nuts. Serve with a pile of poppadums and a bowl of raita.

This turned out perfectly.
I followed it pretty much to the letter with ingredients/times/amounts (bar the nuts and the saffron) and the rice cooked perfectly. Based on some comments I feared the rice wouldn't be cooked, but it was great.

Did not use vegetable stock used water instead; used chilli powder instead of chillies; did not use mustard seeds; used some tomatoes; used madras curry powder instead of curry paste; used sona masoori rice instead of basmati; mixed finely chopped coriander leaves into rice just before the last thirty minutes in the oven; gives a fantastic aroma;used onion raita instead of the cucumber raita ; came out amazingly well; thank you very much for the recipe!!

I think I used this recipe for the technique, rather than ingredients. Made this with brown rice - took an hour to cook, I found the stock level was perfect. Really enjoyed this dish, and I think we'll be enjoying it for a few days to come, there is so much of it! I used new potatoes, carrots, onion and cauliflower. I would put peas or green beans in next time, for colour more than anything. I also used curry powder, rather than paste. Served it with a jar of curry sauce that I filled out with chick peas and green lentils (canned) Definitely a dish I'll make again. A small amount of prep, for a lot of food.

Gorgeous! I forgot to lower it down to 190C/gas 5 but it didn't matter - just cooked the rice faster! Added green pepper as it needed using up. Also made the raita - love the crunch!

I made this for the family recently and was surprised how easy it was - I usually use stir in sauces for curry but I'll make this again. The only slight issue was that it was too spicy for the kids - I'd anticipated this and used Biryani paste instead of Madras, but it was still on the hot side, even for the adults, so we stirred a little coconut milk in as it was served - this helps!

Chef Patrick Turcot Born in Québec City, Patrick Turcot was already showing his culinary inclination at the age of five, when he surprised his parents by ordering “escargots” at a restaurant. By the age of 15, he had developed a full-fledge passion for good food and knew that we wanted to study culinary arts. Upon graduating in both Pastry and International Cooking from the Institut de Tourisme et d’Hôtellerie du Québec, Patrick completed his apprenticeship at the Ritz Carlton in Montreal in 1990. He first started his career at prestigious hotels in Montreal and Quebec City before heading west for a winter to join the kitchen brigade at The Fairmont Château Lake Louise. He returned to Québec City to work at Le Château Frontenac. During that time, he also took on the opportunity to share his experience and taught apprentice cooking at Limoilou College. In 2003, Patrick was delighted to move back to Alberta as Executive Chef at Edmonton’s Fairmont Hotel Macdonald and three years later at the Fairmont Jasper Park Lodge. There, Patrick developed an appreciation for the province’s vibrant professional culinary community and learned to work closely with local producers. In 2005, he joined the ranks of Culinary Team Alberta as a support member and proud ambassador of local farmers. In 2010, Patrick decided to take on a new challenge on the international scene and transferred to the Fairmont in Scottsdale, Arizona, a Five-Diamond property with four signature restaurants, 72,000 square feet of total function space and a Willow Stream Spa. Patrick enjoyed to move from mountain to desert property and loved discovering new local flavors and products such as Agave nectar. He continued to be actively involved in the Chaîne des Rôtisseurs and to share his knowledge with the customer via cooking demo or TV shows. Chef Turcot has received several honors such as the Silver Medal at the Quebec Culinary Show and a Bronze medal at the Montreal Culinary show. He is a true epicurean and loves to treat his friends to his new creations to get their feedback before introducing them on the hotel menus. His culinary philosophy and passion reflect the current trend towards a healthier and naturally nutritional diet. Working with neighboring farmers to seek out the finest in regional and local organic produce, is the essence of his cuisine. At home, he enjoys cooking for his wife and children. He loves when they all help to prepare the ingredients together and sit around the kitchen island waiting to sample first-hand their father’s famous Risotto with truffles. At work, Patrick strives to excel through simplicity, by presenting his guests with dishes of exceptional quality. His style is described as innovative and classical. Using French culinary principles as a foundation and adding the endless supply of regional ingredients, he creates dishes that are simple yet elegant letting the essence of the star ingredients shine through. He works to deconstruct recipes, reinventing them with the products presenting the freshness and most intense flavors.

Zarnak Sidhwa has attentions in cooking at an early age. She got instructions in culinary industry by some well known experts. She started her practice from home since 2005 and did amazingly well both in sweet dishes and spicy dishes in her own ‘Parsi’ society and then focused to increase her professional expertise of making food for friends. Her cooking abilities groomed from her traditional Parsi dishes to out of the ordinary dishes. She is famous for special occasion cakes on wedding and Christmas.

she has enthusiasm in chocolate made special cakes & all other types of cakes. Zarnak always tests her coking knowledge by the including of advanced ingredients in her cooking recipes. Zarnak Sidhwa has aims in her life to remake conventional Parsi cuisine according to the people need so that can be accepted in large surrounding of food lovers.

She does Masala channel’s cooking show ‘Chocoholics’ in an quite amazing way and brings innovative ideas for chocolate lovers.
