Chef Kokab Khawaja - After emerging on television in one of the renowned cooking programs “Dastarkhwan” for almost four years instantly, Kokab Khawaja is unquestionably a family name in Pakistan. She is not only well-known for her cooking expertise but also for classiness and charm in her personality. Her interests not only comprise cuisine but also home decoration, designing and collecting crockery. She always ready to decorate the home and kitchen.

Chef Kokab Khawaja is certainly an old and famous household name in Pakistan. Chef Kokab Khawaja is not only famous for her delicious cooking but also for her sophistication and charisma. She excels not only in the field of cooking but also in home décor and collecting valuable and unique crockery. Her passion for cooking was depicted in her cooking shows that are on air since 1990s on PTV. Her cooking show was a super hit and since then there was no turning back. Apart from the cooking shows, she has been associated with numerous talk shows and radio programs. Kokab Khawaja learnt the art of Chinese cuisine from an institute in China. Similarly she earned certificate in cooking from Thailand and Turkey. She also learnt the art of flower arrangement IKIBANA from Japan. Kokab Khawaja is also a popular social activist and a writer of 20 books including a travelogue. She is a Reiki healer and uses the technique for physical and mental ailments. She also works as a volunteer counselor in the psychiatry department of a hospital.

When she got married, she completed her masters in history and started teaching in college for about 5 years. She was affectionate of cooking but never felt of taking it up as a profession. Her actual fervor for cooking extended some years after she became married. She always looks forward to create any new dishes and she is passionate about her cooking career. She makes exceptionally appetizing and simple dishes in which she chooses healthy and Hilal ingredients.

Kaukab khuwaja initiated her TV career in 1990. Nowadays she is a prominent part of Masala channel through cooking program called “Kokab’s Cuisine.” Besides doing cooking shows she also comes into view in several talk shows and radio programs.

Kaukab khuwaja gained knowledge of the art of cooking Chinese cuisine from China in an institute. In the same way she learnt certified cooking from Thailand and Turkey. She also learnt flower arrangement from Japan. Kokab is a social campaigner and a writer as well; she wrote 20 books including a travelogue. She is also a Reiki healer and uses the method for physical and mental disorders.

Directions
1 Cut the vegetables and set aside

2 Preparing Masala Grind all ingredients below and grind into a paste. Onions chopped(2),Garlic cloves(8 to 9), Ginger grated( 0.5), Green chili(3 to 4), Coriander leaves (3 tablespoons),Fresh grated Coconut(2 tablespoons),Red chili powder( 0.5 tablespoon), Turmeric powder(1 teaspoon), Coriander , Cumin powder(2 tea spoon), Garam masala(0.5 teaspoon) and Tomato chopped(2 medium)

3 Wash the rice thoroughly and soak it for about 15 minutes. Add lime juice, salt, ghee( 1 teaspoon) ,cloves , bay leaves ,black pepper ,green cardamom to the soaked rice .Add 4 cups of boiled water and keep it for cooking in rice cooker. It takes 10 to 12 minutes to get rice cooked.

4 Separate rice grains with spatula/ fork once rice has cooled.

5 Fry the potato finger chips/french fries and onion slice till they get crispy. Also fry Cashews and raisins till golden brown color.

6 Half boil all vegetables with salt to it.

7 Roast masala in a pan for 4 to 5 minutes. Add boiled vegetables and roast for 3 to 4 minutes.

8 In a large bowl, put some cashews and raisins at the bottom.Add layer of rice on it .Then add layer of vegetable on rice , again give layer of rice . Again add vegetable layer .then add rice layer.

9 On top of it spread finger chips, fried sliced onion , cashews and raisins.

10 Enjoy this delicious biryani with Raita . Note while serving put the spoon all the way to the bottom to get all the layers.
