Chef Zakir was born on February 16th, 1967 at Karachi, Pakistan. Zakir primary school name is Qulsoom Bai Valika School but he passed his matriculation from Govt. Boys School of Santabad. After that he completed his intermediate from a renowned college for boys Allama Iqbal which is located at Star Gate Airport Karachi. The only leisure pursuit of Zakir is cooking and his preferred place is Madina and God Cape town in Europe. In 1980, Zakir settled on to get trained from a well-liked Hotel and he started his training from at Sheraton Hotel which is positioned at Club Road Karachi. In 1986, Zakir went to Dubai for working in as a professional Chef and he spent here about two year in two most renowned restaurants. After these two years in 1988 he went to Singapore where he spent almost a year and finally he went to South Africa for higher studied in cooking profession. He also had done a number of jobs in different restaurant before shifting to Batswana. After returning to Pakistan, he very first time joined a Indus TV channel. In 2006, he found his way on another famous channel Hum TV and after two year he started working for Masala TV. Now in Pakistan he is a most preferred Chef with his specialized cooking shows. Chef Zakir Recipes are very admired in all over the Pakistan and in Asian Countries. His ideal ratio of recipe ingridents makes him prominent chef from others. His family principally belongs to Bombay. Zakir surname is Qureshi and his full name is Muhammad Zakir Qureshi.

 2 cinnamon sticks, 2 teaspoons cardamom pods, 4 black cardamom pods, 2 teaspoons cloves, 1 nutmeg, 3 spears mace, 4 bayleaves,  2 teaspoons black peppercorns, 2 teaspoons fennel seeds and 1 teaspoon saffron threads.

Take the two cinnamon sticks and place in your bowl
Then add the cardamom pods
Then add the black cardamom
Then add the cloves
Add the nutmeg
And the mace spears or blades
The bay leaves
The black peppercorns
The fennel seeds
And finally, the saffron threads
Place all spices  into the glass jar,except the saffron. Place the saffron in a separate container as this will be soaked in milk when we use it for our recipe for the biryani!!!

Could you confirm how much of whole byriani garam masala would you use if you were going to use it whole? My confusion has to do with the fact that you can’t just spoon a fraction of the amount prepared in this recipe. Perhaps my question could also be phrased how many servings/portions would the recipe suit as is?

Ingredients
 2 1/2 tablespoons olive oil
3 tablespoons natural yoghurt
2 tablespoons vinegar
1 medium onion, sliced
2 cloves garlic, crushed
1 tablespoon ginger paste
2 small green chillies
2 medium tomatoes, chopped
2 tablespoons garam masala
1 tablespoon dried mint
salt and pepper to taste
5 sprigs coriander
1 (1.25kg) whole chicken, skin removed and cut into pieces
2 litres water
740g uncooked basmati rice
1 bay leaf
4 pods green cardamom
1 pod black cardamom
1 cinnamon stick
salt to taste
1/4 teaspoon turmeric

Method

Heat the olive oil in a large frying pan over medium heat. Mix in the yoghurt and vinegar. Place the onion in the frying pan, and cook until tender. Mix in the garlic, ginger paste, green chillies and tomatoes. Cook and stir until tomatoes are tender. Season with garam masala, mint, salt and pepper, and mix in the coriander.
Place the chicken in the frying pan. Reduce heat to medium-low, cover, and continue cooking 45 minutes, stirring occasionally, until chicken juices run clear.
Bring the water and rice to the boil in a large pot. Mix in the bay leaf, green cardamom, black cardamom and cinnamon. Season with salt to taste. Cover, reduce heat to low, and simmer 20 minutes.
In a separate saucepan, alternate the rice and chicken mixture in layers, topping with rice. Sprinkle with the turmeric, and mix to serve.
